Goat's Cheese - the type sold in a cylindrical shape approximately 8cm across
Olive Oil
Lettuce
Red Onioin Jam or Marmalade

Fried Goat's Cheese

One of the great things about serving this as a starter is that it is very easy do and no problem to cook in front of your guests - ideal if you are on the terrrace with an outdoor kitchen. Apart from that, it has always gone down extremely well with guests.

Method

Cut the goat's cheese into slices approximately 1.5 - 2cm long and place in the heated frying pan with some olive oil - doesn't need to be very deep - not much more than a covering.
Cook for a bout 1 minute which should be just enough to brown the underside, then turn over using a slice and possible a spoon to help steady it.
Cook the second side for 3 or 4 minutes until the whole piece of cheese is soft. If cooked too long it may start to burn on the underside but I have not yet had problems with it melting and spreading in the pan.

Place a bed of shreaded lettuce on each plate, with a spoonful of marmalade or jam on top, then place the fried cheese on that.

The slightly acidic flavour of the cheese goes well with the sweetness of the jam - try different ones to find your favourite - one possibility is Red Onion Jam.
