Ingredients for Rice Pudding
Serves 4 people-
500ml Milk
150g Sugar (according to taste)
200g Rice

To be honest, the rice pudding isn't rustic, it's the way we cook it.
Rustic Cooking a Rice Pudding
Method
We start this off in a saucepan -
Place the milk in a pan and gently bring near to boil.
Add the rice and sugar, then simmer for a couple of minutes.
Transfer to an earthenware pot and place on a stand in the fire. If it is a hot fire used for hooking your main course (spit roast chicken?) you will need a fairly high stand.
Keep the mixture as near to a simmer as possible for 1.5 to 2 hours. The temperature can be adjusted by moving the fire under the pot or moving it away. If the pot boils over, simply remove it from the fire for a few minutes then replace it.
Touch wood, we have not had a failure with this, we end up with a superb rice pudding
amazingly easily.
Not everyone loves rice pudding (though it is often on Spanish menus as Arroz con Leche) and many visitors have forgotten what a good rice pudding can tast like. We often a serve some chopped fruit (a fruit salad if you like) for people to add if they want to tartit up a bit.
