Pepper - Pimiento

An attractive and rewarding vegetable to grow in Spain and one that would be difficult to grow outdoors in the UK. You should be able to produce a steady supply of peppers to use in your cooking from early summer to Christmas.

You can buy plants or grow your own from seed, sown under polythene to establish them earlier. Plant out when the young pepper plants have 6 good leaves, when the weather is warming up. Each plant can grow into a bush 1m high and produce a large number of peppers.
The peppers can be used green or allowed to ripen to their red colour. Excess crop can be dried in the sun for later use.
Drying should be done in August, when the sun is strong. Harvest the peppers complete with a stalk about 2cm long - a string can then be threaded through the stalk of each, enabling bunches to be hung up for drying (against a sunny wall) and storage.
